Born and raised in Kenya, Chef Lewis grew up around open-fire cooking — where nyama choma (roasted meat) is a way of life. After training in Nairobi and Europe, he sharpened his craft in Dubai’s high-pressure kitchen scene, commanding premium grill sections at 72H Lab by Ergon and Nola City Walk.
